Inquiring minds want to know where the single eggplant, who managed not to become bakun, found a home.
It joined some potatoes, carrots, lentils, a nice red wine, some kalamata olives, and a bit of leftover marinara sauce in a French inspired dish Isa named Eggplant Provencal.
I used a lovely cabernet sauvignon for the wine
(as the late great Cajun chef, Justin Wilson, used to say, "never cook with a wine you won't drink...").
The leftover marinara sauce was from the Mom's Marinara recipe also in Appetite for Reduction.
The sauce, wine and kalamata olives put this dish in gourmet territory!
