Road Wraps; traveling vegan

Spinach wraps for the 10 hour road trip.

Wrap #1: Toufayan Bakeries savory spinach wrap, spread with spinach artichoke hummus, homemade walnut Parmesan (walnuts, miso & nutritional yeast pulverized in food processor or blender), red leaf lettuce, Daiya cheddar, topped with Tofurky slices.

All rolled up & ready to eat!

Wrap #2: Savory spinach wrap spread with hummus, homemade Parmesan, Tofurky smoked tempeh bacon, leftover tofu scramble (tofu, garlic, green onions, sundried tomatoes, carrots, parsley, nutritional yeast, turmeric, curry powder, sautéd in veggie broth) topped with Daiya cheddar.

Yes, both were quite filling and very good!
