Road Wraps; traveling vegan

Spinach wraps for the 10 hour road trip.

Wrap #1: Toufayan Bakeries savory spinach wrap, spread with spinach artichoke hummus, homemade walnut Parmesan (walnuts, miso & nutritional yeast pulverized in food processor or blender), red leaf lettuce, Daiya cheddar, topped with Tofurky slices.

All rolled up & ready to eat!

Wrap #2: Savory spinach wrap spread with hummus, homemade Parmesan, Tofurky smoked tempeh bacon, leftover tofu scramble (tofu, garlic, green onions, sundried tomatoes, carrots, parsley, nutritional yeast, turmeric, curry powder, saut├ęd in veggie broth) topped with Daiya cheddar.

Yes, both were quite filling and very good!
