Satisfaction Salad

Home from September road trip,
Yoga retreat weekend,
followed by relaxing Panama City Beach getaway with

Sensational Satisfying "Hugh-jazz" Salad
(Say it quickly, please)

Red leaf and romaine lettuces, celery, carrots, beets, mushrooms, red bell pepper, crumbled tempeh sausage (thanks heartyvegan.com), orange slices, homemade walnut Parmesan, dressed with mashed avocado, fresh squeezed orange juice & nutritional yeast.

Road Wraps; traveling vegan

Spinach wraps for the 10 hour road trip.

Wrap #1: Toufayan Bakeries savory spinach wrap, spread with spinach artichoke hummus, homemade walnut Parmesan (walnuts, miso & nutritional yeast pulverized in food processor or blender), red leaf lettuce, Daiya cheddar, topped with Tofurky slices.

All rolled up & ready to eat!

Wrap #2: Savory spinach wrap spread with hummus, homemade Parmesan, Tofurky smoked tempeh bacon, leftover tofu scramble (tofu, garlic, green onions, sundried tomatoes, carrots, parsley, nutritional yeast, turmeric, curry powder, sautéd in veggie broth) topped with Daiya cheddar.

Yes, both were quite filling and very good!

Bought the sambar before leaving Texas. Rice was part of a giveaway at The Seed vegan event in NYC last month.

 
So good together; making traveling Vegan tasty and easy!

Raw & Juicy Vegan Seaside, FL


Returning from Ft. Walton Beach to our home away from home for the week, Panama City Beach, we happened upon Vegan/ vegetarian food truck, Raw and Juicy, in Seaside. 

Had the spring rolls, with peanut sauce. Excellent!


Located at the corner of County Highway 30A and Central Square in Seaside, Florida, you can't miss the charming airstream café.

The café serves fresh organic salads, cold-pressed organic juices, protein shakes, fresh prepared foods, and healthy snacks prepared fresh daily at The Kitchen. Open 8am to 8pm everyday.

Baked Falafel Pops


Happy Labor Day, and Day 1 of Vegan MoFo 2014.

Year of transitions, one of my best friends lost her 8 1/2 battle with metastatic breast cancer New Year's Day; rest in peace, CynthiaF. Her just turned 13- wanting to be 30 - year old daughter is moving to Cali with Grandma, so busy helping with that, & packing up her house to put on the market.
And packing for weekend Yoga retreat in Florida.
Which means first few weeks will be quick food that travels well. Here we go...

I made the Baked Falafel, in the Babycakes Cake Pop Maker.
Why? Because it's convenient, and does not heat up the house like turning on the oven.
Original plan was to grill these on the patio; however, we were Blessed with much needed rain today. (Thank you, thank you, thank you!)
Cake Pop maker to the rescue. The auto-timer green light is geared toward baked pastries, so I had to play around a bit to make sure they were done. Baked in 8-10 minutes, since the beauty of the machine is it cooks both sides simultaneously.

The Hearty Vegan's Texas Tempeh & Texas Tempeh sausage

What I'm enjoying, lately, is cooking, and eating, this locally produced Tempeh. 





The tempeh is also available in both black eyed pea and garbanzo bean versions.
Thanks to the good ladies at The Hearty Vegan.
Yes, I'm in Houston, and yes, this is made in Austin. It's not exactly biking distance, yet as local as one can get without making it oneself.

Zucchini "Pasta" with Tomatoes and Walnuts

Served on a bed of red leaf lettuce.
Excellent "raw" dish for cool summer dining.
Added chopped onions, and extra garlic for more flavor,
and used miso paste instead of salt.
Sungold cherry tomatoes, basil, and zucchini 
are from my garden.
making the dish very fresh and inexpensive.
Highly recommended, and will make again!
