It's election season here in the states.
(Yeah, I know, stating the obvious.)
Texas early voting begins today,
and as a volunteer,
I'm busy, and may need comforting.

Vegan Comfort Foods
from my Slow Cooker.
Today
Green Beans and Potatoes in Cream Sauce
Sauce:
1 1/2 cups non dairy milk (I used rice milk)
1 cup nutritional yeast
1/2 cup cashews, soaked 2-3 hours
1 cup vegetable broth, divided
1 medium onion, diced
4 cloves garlic, minced
10 ounces finely chopped mushrooms
2 Tablespoons paprika
pinch cayenne
1 teaspoon liquid smoke (optional)
salt, fresh ground pepper to taste
1 1/2 pounds green beans, trimmed and sliced
2 pounds new (red) potatoes,
sliced and kept in cold water to prevent discoloring
Lightly oil crock pot.
Blend milk, 3/4 cup broth, nutritional yeast, cashews, paprika and cayenne in high speed blender or food processor until smooth.
(I use my Vitamix) Set aside.
In large skillet, saute onion in 1/4 cup vegetable broth over medium heat until softened, 3-5 minutes.
Add garlic, saute another minute.
Add mushrooms, saute another 8-10 minutes,
until mushrooms are soft and juicy.
Add milk mixture to skillet, stir to combine,
add salt and pepper to taste, and
liquid smoke, if using.
Spread thin layer of sauce in bottom of crock pot.
Layer 1/2 of potatoes slices, then 1/2 of green beans,
and 1/2 of remaining sauce.
Layer remaining green beans, then remaining potatoes.
Top with remaining sauce.
Cover and cook on low for 7-8 hours,
until potato slices are tender.
Enjoy!
Notes: I have an older slow cooker; newer ones may cook in as little as 6 hours. If sauce is too thin, either thicken it to your liking by dissolving 2 Tablespoons flour or arrowroot powder in 1/2 cup cold broth or water, then stir into crockpot; or turn setting to high, prop lid open, and cook additional 30 minutes. If sauce is too thick, add equal parts broth and milk as desired.
All ingredients are organic, so potatoes not peeled.
I have also made this with fresh broccoli instead of green beans, stirring it in for the last hour of cooking.
