Today's Meetup event was

Oh perceptive readers of mine,
you guessed it,
I had to miss out (again).
As I, again, had the honor and privilege of
participating in fall college fairs,
repping my alma mater
RUTGERS UNIVERSITY,
home of the SCARLET KNIGHTS!
(yes, in an RU State of Mind)

My Vegan MoFo/Texas Go Vegan Week
Day One dining was at
Loving Hut;
Making the Vegan restaurant rounds this week,
so it's all good.

Today: eating at home.

Started my day with a 
Green Smoothie
apple, banana, blueberries, cantaloupe, celery, dates, ginger, kale.
Smooth sipping throughout the morning.

Lunch/Dinner - Hugh Jazz Salad
(say it quickly, all together now)
romaine lettuce, beets, carrots, mushrooms, chopped olives, orange slices, grape tomatoes, Daiya mozzarella shreds, homemade walnut 'parma' topping.
Juice from the orange slices moistened it just right!

Walnut parma topping:
1 cup raw walnuts, shelled
1/4 cup nutritional yeast flakes
1 Tablespoon miso paste, divided
Chop walnuts in food processor. Add nutritional yeast and pulse until well mixed. Divide miso into small chunks, spread over walnut/yeast mixture in processor, and pulse until incorporated.
Do not over-process! 
You want a somewhat chunky consistency, not walnut butter.
Store in refrigerator. Enjoy.
