Vegan MoFo Day 14 - Stand

Busy with CASA volunteer duties as well.

Very rewarding, worthwhile organization that I hope you'll look into.

Of course, the news is the OCCUPY movement, 
spreading around this great nation of mine,
and how people are gathering to support each other in taking and making a STAND 
for the things near and dear to them.

Some people have been there for days,
while others come and go as they can.
Got me to thinking that, if I were in Gotham (NYC),
I'd help organize a meetup, and we would rotate
taking vegan goodies to the Occupiers.
Mostly finger food, so no utensils needed.

For starters,
Coconut Oat Bran Cranberry Muffins
adapted from
Earth Balance's 
Cooking with Coconut booklet


in which they highlight their new product,
Organic extra Virgin Coconut Spread.



 
 Recipe:
1 cup whole wheat pastry flour
1 cup oat bran
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup unsweetened light coconut milk
1/3 organic brown sugar
1/4 cup melted Earth Balance Coconut Spread
2 tsp egg replacer
1 tsp vanilla extract
1/4 shredded coconut, plus extra for top of muffins (I omitted)
1/4 raisins (I subbed dried cranberries 'cause I like them better)

Their directions call for pre-heating oven to 400 degrees F. and 
lining a muffin tin with paper cups or spraying with cooking spray.
NOT!
Southeast Texas daytime temperatures still above 90, so, 
yeah, you guessed it,
Cupcake maker to the rescue!

 In one bowl, whisk together flour, oat bran, baking powder, baking soda, and salt. Set aside.
 In separate bowl, whisk together coconut milk, brown sugar, Earth Balance Coconut Spread, egg replacer and vanilla.
Mix wet and dry ingredients together.
Fold in coconut and cranberries.


Divide evenly into cupcake maker, about 2 TBS per cup, 
pressing down with spatula to release any air bubbles.

 Close lid and bake until done (the usual, toothpick-in-the-center-comes-out-clean, test), about 8-10 minutes.
Original recipe yielded 12 muffins; mini-maker gives up 24,
3 batches at 8 per batch. Good timing.
Tasty too.
